Grilled Halloumi with Quinoa & Beetroot Salad (& my struggle with blogging)




Before I jump to the recipe for this delicious salad there is something I need to address with regards to my blogging...

It's hard to believe it but I started blogging 5 years ago. My reason for starting this blog was simple....I loved to cook and this was the easiest way for me to share my often-requested recipes with family and friends. To this day I still love cooking, I am a total food-oholic! I get excited about shopping for food, finding new ingredients, getting reacquainted with recipes and ingredients from my past and exploring new cuisines throughout the world from the comfort of my own kitchen.You are far more likely to find me reading a cookbook or food magazine than any other book and with a library of 1000 cookbooks (and growing) I'm never short of something to read! Of course the books and magazines just feed my enthusiasm for cooking by offering endless new ideas and inspiration and so it was only a matter of time before I started reviewing cookbooks and really putting them to the test to see if they were worth a place on my overloaded, sagging shelves! I love reviewing cookbooks and so I do plan to do a lot more of that on this blog but without doubt my favourite thing to do still is come up with my own ideas and recipes and share them with you.

Cheese & Spring Onion Scones




As I've already mentioned (in my last post) right now is one of my favourite seasons ever - Soup Season! Cold days and steaming hot bowls of homely, filling and nourishing soup go hand and hand but when you really want to turn a piping hot bowl of soup into a meal, you can't beat a little something on the side! For me it's almost a necessity to have something to dip into my soup and favourites include things as simple as some thickly sliced fresh bread slathered with butter, an oozing Cheese Toastie or these Cheese and Spring Onion Scones. They are so easy to make and don't take long at all and really are the perfect accompaniment to a hot bowl of soup on a crisp Autumn day. They are also great on their own and would make a perfect accompaniment to an Afternoon Tea Party, Picnic or light lunch, filled with some good mature cheddar, chutney of your choice and some rocket. Either way they won't last long!

450g all-purpose flour, plus extra for dusting
1 tbsp baking powder
½ tsp salt
150g cold butter, cut into cubes
1 tsp chilli flakes (optional)
4-6 spring onions (depending on how big they are), finely sliced
150g strong cheddar cheese, grated
150-175ml milk, plus extra for brushing

Preheat the oven to 400F/ 200C and lightly dust a baking tray with some flour then set aside.

Mix the flour, baking powder and salt in a large bowl then add the cubes of cold butter. Using your finger tips gently rub the butter into the flour until you have coarse crumbs. Stir in half of the chilli flakes (if using), the spring onions and 100g of the cheese. Mix it all together then gradually add 150ml of milk until you have a soft dough. If you need to add the remaining little bit of milk.

Dust a large chopping board or other work surface with flour and turn the scone mixture out onto the surface. Knead the mixture together gently until it just comes together then roll out (or you can gently press it out with the palm of your hand) until it is a thickness of roughly 2.5cm. Using a 6cm (2 ½ inch) round pastry cutter cut out the scones until you have 12 (just re-roll the trimmings until you have 12).

Place the scones on the prepared baking tray and brush each one with a little milk. Sprinkle over a touch of the remaining chilli and the last 50g of cheese then bake in the preheated oven for 12-18 minutes* until golden.

Once ready transfer to a wire rack and leave to cool slightly before splitting and filling as you like (see above) or simply slathering with butter and dipping into a hot bowl of soup!


*The time needed will vary on your oven and where you live but for me it takes longer. Start checking after 12 minutes and go from there until they are raised, golden and covered in melted cheese!

Baked Potato Soup with Crispy Potato Skins





This soup is really a meal in itself. It is filling and delicious and if you like Baked Potatoes you will love this! It takes a little bit of time to make since you have to bake the potatoes first but it is well worth it.

4 medium sized baking potatoes, washed & dried
1 tbsp butter
1 tbsp olive oil, plus extra for the potatoes
1 onion, roughly chopped
1 leek, roughly chopped
1 clove of garlic, finely chopped
750ml vegetable or chicken stock
250ml milk
60ml cream
Salt & freshly ground black pepper

For the toppings:
Sour Cream or Greek Yogurt
Grated cheddar cheese
Spring onions or chives, finely chopped
Bacon, cooked til crispy then crumbled into small pieces

Preheat the oven to 220C/425F. Rub a little olive oil over each potato then put in the oven and bake for 20 minutes, then lower the heat to 190C/375F and continue to bake them for a further 45-60 minutes until you have crisp skins and fluffy, cooked centers (check by piercing a small sharp knife into the center of the potatoes to make sure they are tender and soft). Set aside and leave until cool slightly then cut them in half and let them cool some more.

Increase the heat of the oven to 200C/400F.

Once cool enough to handle carefully scoop out the potato flesh leaving the skins intact with enough potato still on them to make potato skins. Set the scooped potato aside. Cut each potato skin in half then put them on a baking tray and drizzle with a little olive oil. Season with salt and pepper then put back in the oven and bake for roughly 20 minutes until golden and crisp.

In a large pan heat the butter with the tablespoon of oil then add the onion and leek and cook for roughly 7 minutes until softened but not coloured. Add the garlic and cook for another minute before adding the cooked potato, stock and seasoning. Leave to cook for 5 minutes then remove from the heat. Leave to cool slightly then liquidize in a blender until smooth. Return the soup to a pan then add the milk and cream. Taste to check the seasoning and adjust if necessary. Keep warm until ready to serve.

Once the potato skins are almost ready remove from the oven then put a little grated cheese on each one. Return them back to the oven just until the cheese has melted. To serve add a small spoonful of sour cream or Greek yogurt to each one then sprinkle over some thinly sliced spring/green onions.

To serve the soup ladle it into 4 bowls then as with the potato skins top with some grated cheese, a little Greek yogurt or Sour Cream, some spring onions and some bacon pieces. Serve at once with the potato skins on the side.

*If you prefer and want to cut out some of the calories serve the potato skins plain - they are still absolutely delicious and perfect for dunking!

Catherine Wheels



Crisp and flaky puff pastry filled with a tomato sauce and plenty of bubbling, melted cheese – these are the perfect little snack to munch on. And since they resemble (and are therefore called!) Catherine Wheels, it makes them the perfect Bonfire Night treat. Delicious served warm out of the oven, these treats won't last long and will be loved by everyone.

Cheese & Tomato




Makes roughly 14 {easily doubled}

1 sheet of ready rolled puff pastry
75ml (5 tbsp) basic tomato sauce or pizza sauce
115g/ 4oz Cheddar cheese, grated
Freshly ground black pepper

Preheat the oven to 220C/ 425F/ GM 7 and line a baking tray with parchment paper.

Spread the puff pastry evenly with the tomato sauce, getting right to the edges then sprinkle over the grated cheese. Grind over a little black pepper then roll the puff pastry up as tightly as you can. Trim off the ends then slice the roll into roughly ½ inch thick pieces.

Arrange the slices on the tray. Bake in the oven for 14-15 minutes, until the puff pastry is golden and the cheese bubbling. Leave to cool for a minute or 2 then remove and place on a wire rack to cool slightly.


And why not try some Mozzarella & Pesto Catherine Wheels which are equally delicious.

Mozzarella & Pesto

Freshly ground black pepper

Cauliflower & Gruyere Soup {And Challenge Update}





This soup, courtesy of Ross Dobson and his book Kitchen Seasons, is rich, indulgent and utterly delicious – so good, that I thought it would be rude not to share it with you and I would hate to be considered rude! If you really want to get an idea of what this soup is like then think fondue meets cauliflower and cheese and you will get an idea of how amazing it is. The end result is a smooth, silky soup that is perfect for a cold night snuggled up by the fire. All you need to go with it is some nice crusty bread.

Serves 4-6 (book says 4, I got 6 easily)

2 tbsp butter
1 onion, roughly chopped
1 celery stalk, chopped
1 small cauliflower (about 1kg), cut into small pieces
1.5 litres chicken or vegetable stock
250ml double/ whipping cream
200g gruyere cheese, grated (plus a little extra for serving)
sea salt & freshly ground black pepper
sprinkling of fresh parsley, chopped


Heat the butter in a large pan until melted and bubbling. Add the onion and celery and cook for roughly 5 minutes until softened but not coloured. Add the cauliflower and stock and bring to the boil then leave to gently boil for roughly 20-25 minutes until the cauliflower is really soft and breaking up.

Leave to cool slightly then puree in a blender in batches until silky smooth. Return the soup to the heat and add the cream and cheese, then cook over a low heat, stirring, until the cheese has melted completely. Season with a little salt and pepper then taste and adjust as necessary. Serve hot in bowls sprinkled with some extra cheese and the parsley and enjoy with some crusty bread.

Week 1 of the Cookbook Challenge

As I reminder and to those of you that perhaps missed the original post, on October 1st I challenged myself to a full month of cooking using 10 cookbooks, with a minimum of 1 recipe per day (see here for the full challenge). Here is a quick recap of how my first week went....


Well I managed the first week without too many problems but to be honest this challenge is definitely a lot harder than I thought! I knew it wasn't going to be easy – the planning and scouring the books for recipes I wanted to try was and still is extremely time consuming and a little overwhelming to be honest, but the biggest obstacle I'm finding is that it's just too much food!! There are always left-overs which is great but slowly the fridge is getting more and more filled with Tupperware containers and we just can't keep up! Since part of the challenge was to keep it low in cost I'm going to have to cut back a little.... That being said I am still enjoying it – trying lots of new recipes and reading and re-reading a variety of cookbooks. Out of the 9 recipes I made in week 1, I haven't had any major disasters! Perhaps a couple of recipes that I might not make again, or if I do will have to adjust but really that's not bad going. My favourite recipes of the 9 are both soup recipes and both from the book Kitchen Seasons by Ross Dobson. I have also really enjoyed the recipes from The Meat Free Mondays Cookbook and will be cooking a third time from that book tonight. Here's hoping week 2 is another successful week!

The Tested Recipes:

Day 1:   Strawberry& Banana Smoothie {The Meat Free Mondays Cookbook} ( big thumbs up –   have already made again)

Lentil, Chickpea, Cheddar & Onion Burgers with Winter Coleslaw {The Meat Free Mondays Cookbook}( thumbs up – would make again)

Day 2:   Violet Morning Smoothie {Eat Yourself Thin Faster} ( thumbs up – will make again)

Day 3:   Quinoa & Roasted Tomato Salad {MFM}( as it is it's a miss, but it can definitely be adapted to make it tasty so I might do that. It tasted better on the second day so I haven't ruled it out completely!)

Cauliflower & Gruyere Soup {Kitchen Seasons} (good but even better the next day! It is rich and calorie laden so this is one I would keep for a special occasion. Think fondue meets soup! (See above for recipe.)

Day 4:    Raspberry-Oat Muffins {Pretty Delicious} (easy to make, good taste but bottoms stuck to the wrapper and texture was pretty chewy one cooled. I'm undecided if I will try them again.)

Day 5:    Carrot & Lentil Soup {Kitchen Seasons} ( fantastic! Tasted like the lentil soup my mum used to make and I could probably have eaten the entire pot! Loved it and will be making it all winter long!!)

Day 6:    Orange-Glazed Chicken Stir-Fry on Brown Rice {Pretty Delicious} (really good and will definitely make again. Has quite a kick to it so miss out/cut down the amount of cayenne pepper if you don't want it spicy.)

Day 7:    Breakfast Burrito {Eat Yourself Thin Faster} ( A perfect start to the day and a slightly healthier option as well! I loved adding the chopped chillies to the scrambled eggs for a bit of a kick but it did mean I had to make a 2nd spice-free version for Wee One! I also added more turkey sausage than the recipe called for as ½ a sausage seemed ridiculous!! Anyway it was delicious and both hubby and I really enjoyed it! I will definitely make these again.)

Classic Barbecued Beef Burgers




When it comes to Summer and barbecue season you can't let it pass without making plenty of burgers as you can't beat a perfectly grilled, slightly charred burger enjoyed outside on a sunny day. We eat burgers quite a lot – they are just so versatile and make the perfect Saturday night feast (even in the winter!). You can change things up by varying what you put on your Burger but we always have to have cheese, lettuce, red onion and pickles! Special occasions call for sauteed mushrooms, bacon and occasionally spicy jalapenos and of course I can never resist some slices of fresh tomato. Finished off with some mayonnaise, mustard and tomato ketchup and you have the perfect finger-licking burger!
