This onion marmalade is a great recipe to have on hand. It takes under 1 hour to make and goes with so much. My favourite is to have it on my Steak Sandwich with Red Onion Marmalade but it is also delicious on a pizza with blue cheese (or goats cheese) and some sliced sausages, and of course quite simply with cheese on crusty bread. Make up a batch and keep it in your fridge for a delicious and easy meal!
1 tbsp butter
Drizzle of olive oil
1 large red onion, finely sliced
2 cloves of garlic, finely chopped
2 tbsp Balsamic Vinegar
3 tbsp redcurrant jelly
Pinch of dried chilli flakes (optional)
125ml red wine
Salt and pepper
Melt the butter with the oil in a medium sized pan until sizzling then add the onion. Cook for roughly 8 minutes until softened then add the garlic and cook for another minute before adding the balsamic vinegar. Cook for a minute or so until the vinegar has completely reduced then add the redcurrant jelly and chilli flakes (if using). Stir until the jelly has melted then add the wine, salt and pepper. Leave to simmer gently for 25-30 minutes. Once ready taste to check the seasoning and adjust if necessary. Leave to cool before serving.
This looks delicious. I have made something similiar to this and really enjoyed it as a topping to a sausage sandwich. Yummy!
